Sopapilla Cheesecake Pie



This was my Superbowl contribution to the potluck spread. It was delicious! So easy to make. Put this together quickly in the morning, let it cool all day, and took it to the party at 3ish. It was even better at a cooler room temperature after it sat for awhile. Big hit!

Red Velvet Cheesecake Brownies



I know, I know. I'm just going to apologize now... but I had to! How can you resist?! Yes... they are as good as they look, probably a little better. I'm such a sucker for red velvet, even though a perfect red velvet is a difficult task. These did not disappoint one bit. Just enough of that subtle chocolate flavor perfectly balanced out by the smooth, creamy cheesecake topping. My swirls even turned out this time! Let these cool completely before cutting. I found I liked them better the second day (morning). You know I didn't wait a whole day!

Cake Pops


Yesterday was my sister Abbey's baby shower for my soon to be first nephew, Connor. I thought it would be nice to make these cake pops as little party favors for the guests on their way out. The idea was definitely cute, but it was a much more difficult task than I had originally anticipated. Once you get the hang of it they get a little easier, but the first couple were a rough go around! I used a devil's food cake mix with cream cheese frosting and white chocolate candy melts with baby boy blue sprinkles. Can't wait to meet you Connor!

Pink Lady Cake


This was the celebration cake for a work baby shower for my educator Julie's first little girl! It was definitely tasty, but I for sure need some cake making practice because it was no easy feat. This one was a triple layer, real strawberry cake, separated by a delectable cream cheese frosting. Quite pleasing to the palate! I stuck closely to the recipe, aside from the addition of even more red food coloring. Pink is a necessary hue for a girly baby shower. I probably could've actually used even more than I did to make that pink really pop. My only warning on this one is this is one TALL cake. The lid for my cake stand wouldn't even fit over the cake! It certainly wasn't easy trying to transport this cake by myself across town. One hand on the cake, one hand for the steering wheel! Congrats Julie! Can't wait to meet the little one.
